Healthy Taco Time
Guess what time of year it is???
Thats right… Time to get back on track with a healthy diet that includes exercise!!
At least until my cheat day for Superbowl. 😉

Lets Go
Here is what you will need:
- Red, yellow & orange bell peppers.
- 1½ lbs ground lean turkey.
- Low sodium taco seasoning.
- ½ of a sweet onion. Diced
- Can of black beans. Rinsed
- Sharp shredded cheddar cheese
- Olive oil
- Salt & Pepper
- Sour cream
- Salsa
Here is what you will need to do:
Preheat oven to 350º.
Clean out your peppers and cut them in half. Coat the halves with olive oil and sprinkle with salt & pepper. Â Lay them in a glass pan and cook for 10-15 minutes.
 Cook the ground turkey in a little olive oil for a few minutes and then add in your diced sweet onion. Cook until ground turkey is no longer pink and is all chopped up. Season with low sodium taco seasoning and add in the black beans. Give it all a good stir and cook together for a few more minutes.
Stuff each pepper half with the meat mixture.  Cover with foil and cook for 20 minutes.
Uncover. Top each pepper half with sharp cheddar cheese and cook until cheese is melted.
Serve them up with sour cream and your favorite salsa.
