It’s that time of the year when everyone starts thinking about how summer is right around the corner and how they need to loose a few pounds before it gets here. I have definitely been treating myself this winter and since the baby is going to be one in May, its time I get myself back on track. So when two of my girlie friends were coming over to visit, I thought it would be great to make a yummy healthy lunch for us.
Here is what you will need:
– sliced red onion
– container of hummus
– jar of marinated artichoke hearts
– jar of roasted red peppers
– pitted kalamata olives
– crumbled feta cheese
– bag of spring mix salad
– balsamic salad dressing
– whole wheat wraps
Here is what you need to do:
Brown up the red onion in a little olive oil. Remove the onions when they are soft and slightly browned and place in a bowl. Do not clean out pan!!! Use it to warm up your tortilla wraps.
Slice up your red peppers, kalamata olives and toss your spring mix salad lightly with the balsamic dressing. Warm up your tortillas and it’s time to assemble. I like to put a layer of hummus, then onions, artichokes, red peppers, olives, feta and top with salad.
You can try to wrap it all up, but I just treat it like a taco and gobble it up.
Bon’s Birthday is in a few days, so our friend Lynn brought some yummy cupcakes (accompanied by fresh fruit of course) to celebrate. The baby just loves a good Happy Birthday sing a long.
